The missionary schedule is relentless. Day after day, missionaries are stretched physically, mentally, emotionally, and physically. It’s critical that their bodies are receiving the proper nutrients to help make this possible. I’m a big believer in the power of nutrition, but I also recognize that missionaries have limited funds, time, and resources. Boiled eggs are a cheap, nutritious, protein-packed alternative to a sugary breakfast. Best of all, they require minimal oversight.
Place eggs in a large pot and cover by an inch with cool water. Put the lid on the pot and bring the water to a rolling boil. Turn the heat off and set the timer for 4-5 minutes (soft-boiled), 7-8 minutes (medium-boiled) or 8-10 minutes (hard-boiled).
Remove the eggs from the heat and immediately place in cold water (ice water if possible). Peel the egg shells off.
Toast and butter a piece of wheat bread and there’s breakfast!
